T A H I N I  VEGAN BROWNIES

3 tbsp tahini
1.5 tbsp coconut sugar
1-3 tbsp plant milk (oat, almond or soya depending thin your tahini to allow it to swirl)
1 tsp maca powder
pinch of salt

1 small avocado (approx 1/2 c)
1/4 cup plant milk plus 4 tbsp
1/2 tsp vanilla
¾ cup coconut sugar
¼ cup coconut oil
1 cup gluten free flour* ( I used ¾ cup gluten free mix, ¼ sorghum)
½ cup cacao powder
½ tsp salt
1 tsp baking powder
40g dark chocolate, finely chopped

METHOD
1) Pre-heat oven to 160C. Line a 15cm x 15cm pan with silicone paper
Dissolve the sugar & salt in a bowl with 1 tbsp of milk and maca powder, then mix together the tahini. Add more milk to make it “swirlable”. 2) Pop the avocado in the blender with the vanilla, milk, coconut sugar & oil, whizz until smooth.

3) Into a bowl, sift in your flour, cacao powder and baking soda. Then add the pinch of salt and mix.

4) Add in the liquid into the dry ingredients and fold in until combined. You may need to add a little more milk. Consistency needs to be like a thick batter.

5) Fold in the chocolate and then pour it into your prepared tin.
Dollop your tahini in 5-6 places and swirl with the back of a spoon.
Bake in the oven for 15 minutes. Remove and allow to cool before cutting

Sesame roasted butternut & tomato salad

This recipe came out of conundrum at home!  What to do when you live in a country where sweet vegetables like butternut and sweet potato are a staple and your British family just don’t do sweet vegetable like butternut! If you lazy or have no time, the supermarkets do cheeky packets of chopped veg, which is super handy and make this salad and easy midweek supper! Could also be your Halloween contribution! We like when heat of the tomato & butternut wilts the salad and the juices of the tomato adds to the dressing, if you don’t like the sound of this, just cool the roast veggies completely!

1kg butternut or pumpkin, diced 
3 tbsp sesame seeds
2 tbsp sesame oil
1 tbsp soy sauce

500g plum tomatoes, halved lengthways

1 avocado, diced (optional if out of season)
½ cucumber, sliced
50g feta, crumbled [remove if vegan) 
2-3 heads of baby gem lettuce, rinsed & leaves separated
10g basil, roughly chopped
1 green chilli sliced ( optional )
2 tbsp pumpkin seeds
2 tbsp sesame seeds

Dressing
½ -1 tsp wasabi (depending on how hot you like it)
2 tbsp mirin
2 tbsp rice vinegar
2 tbsp macadamia or avocado oil
1 tbsp sesame oil

1) Preheat the oven to 180C
Tip the butternut into a bowl, tip in the oil, soy & sesame seeds. Give it a good old stir to coat everything well and tip it on to a large roasting tray. Pop it in the oven for 40 minutes.

2) Meanwhile, slice the tomatoes and add to the oven to roast for 20 minutes.
Remove the tomatoes & butternut and allow to cool.

3) While the vegetables are cooing, prepare your dressing by putting it all into a jam jar and shaking vigorously. Rinse and dry your lettuce leaves, chop the cucumber & tear up the basil.

4) Pile the greens into your salad bowl and top with the roast veg, sprinkle over the seeds with the feta and serve.
