  • DAY 1.... EASY MEAL 1:
Fish pie
Serves 4-5

600-800g white fish( could be smoked)
700ml milk
Pinch of nutmeg
50g butter
15g cornflour or flour
400g frozen peas or beans or both
10g parsley, chopped of you have
700g or 8 large potatoes, quartered

Right, pop the fish in a large frying pan, cover with milk. If you have extra onion you could add a few slices to the pan. Add a pinch on salt and nutmeg and bring it to a simmer and cook for 3-5 minutes until the fish flakes. Tip in the peas and beans for the last minute.

Strain the milk from the fish & veg. Remove any bones or skin and set aside.

Lightly clean the pan, melt 20g of the butter then off the heat stir in the flour to a smooth paste. Pour over the warm milk and stir over a low heat to thicken. Add parsley if you have.

Meanwhile, pop the potatoes in a pan, i actually don't bother to peel them, I quite like the texture! Cover with water and bring to the boil. Simmer for 8-10 minutes until tender. Drain & crush with 30g of butter.
Set aside

Stir the fish into the thickened sauce. Tip into an ovenproof dish. Tip over the crushed potatoes  and bake in a preheated oven 200C for 20 minutes until golden
